    Boiled Okra Bonanza

    Ingredients

    • 1 lb fresh whole okra, cross-cut into tiny 1/4-inch wheels
    • 4 cups warm tap water
    • 1/2 cup mayonnaise (do not substitute with Miracle Whip)
    • 1 tbsp white vinegar
    • 1 pinch of salt

    Instructions

    1. Wash the okra thoroughly, leave the stems on for texture, and slice into thin rings.
    2. Bring 4 cups of tap water to a gentle simmer on low heat. Dump in the sliced okra.
    3. Cover and let it simmer for 40 to 45 minutes until the water transforms into a thick, ropey, translucent mucilage. Do not drain.
    4. Remove from heat and immediately whisk in 1/2 cup of mayonnaise and the white vinegar until it forms a lukewarm suspension.
    5. Pour into a shallow bowl. Sprinkle a pinch of salt on top and serve with a spoon.

      More seriously, if you want to serve okra to someone who says they don’t like it, I’ve had success with giving them dry-fried okra. Wash the okras and dry very thoroughly, they have to be dry for this to work. Slice them (throw out the stems). Saute in hot pan with a little oil and any spices you want (berebere is good) but - this is important - NO SALT until they are done.

      This cooks them without the slime, I personally like the okra slime but also like them dry fried, the flavor is really good.
